Gud (Jaggery) Flax Paratha

Ingredients
The Dough:
1.5 cups whole wheat flour
1/2 tsp ghee (for the dough)
A pinch of salt
Warm water (as needed)
The Sweet Filling:
1/2 cup grated jaggery (Gud)
1/4 cup ground flaxseed (flax meal)
1/2 tsp fennel seeds (Saunf), slightly crushed
1/4 tsp cardamom powder
1 tsp ghee (to bind the filling)
Instructions
Knead: Mix flour, salt, and ghee; add warm water to form a soft dough and rest for 20 minutes.
Mix: Combine grated jaggery, ground flaxseed, fennel, and cardamom with a teaspoon of ghee.
Stuff: Roll a dough ball into a 4-inch circle, add 1.5 tablespoons of filling, and seal the edges.
Roll: Gently flatten and roll the stuffed ball into a 6-inch circle.
Cook: Heat on a tawa over medium-low; flip when bubbles appear.
Gild: Apply ghee to both sides and press until golden and the center is melted.
